Make sure you ride Speed: The Ride at the Nascar Cafe inside the Sahara Hotel and Casino. A great launched roller coaster! Best ride in Las Vegas. Also, make sure you check out Star Trek: The Experience at the Las Vegas Hilton. The simulator portion is good (not great), but the preshow, which is much longer than the simulator, is terrific. It is rather expensive though. Canyon Blaster at Circus Curcus is a great double loop, double corkscrew coaster that is rather smooth and gives great airtime on the first drop in the back row (too bad there are OTSR's, though). The Big Shot at the Stratosphere is also another great ride. The view is spectacular and the ride is just as great. Don't bother riding the High Roller at the Stratosphere. If you have time, I would suggest checking out Race for Atlantis at Ceaser's (sp?) Palace. A good IMAX simulator that is also 3-D, which adds to the excitement.
Now for the what not to do list. Like I said, skip the Let It Ride, High Roller at the Stratosphere. A big waste of money. A bigger waste of money is the Manhatten Express at New York New York Hotel and Casino. It is very rough (what a surprise, it was built by Togo), has an uninspiring layout, and is just plain boring. Just as bad as Windjammer at Knott's Berry Farm. Skip the simulators at the Venician. They are small and unexciting. You actually sit on the simulator for at least 10 seconds without any movement.
If you are coming from Los Angeles, it is definitely worth a visit to Buffalo Bills Hotel to ride Desperado. It is a little rough (no where near Manhatten Express), but it has a great first drop and is a good coaster. It is only worth going to if you are coming from Los Angeles.
The Luxor has a simulator, but I have yet to ride it. I heard it is good and it is an Imax.
