I can only help you out on Knott's and Magic Mountain, as those are my two home parks and I am relatively familiar with both of those, and not so much with the NorCal parks. Knott's is open daily everday of the year except Christmas Day and Magic Mountain goes into weekend only operation starting I believe October. Go to their website

With Knott's, I would recommend the Knott's Berry Farm Resort Hotel only because it is so convenient to be staying at a hotel owned by the park - it's literally RIGHT NEXT to the park (if you get a room on the North side of the hotel, you can get a spectacular view of the park). As with Magic Mountain, there are countless numbers of motels/hotels that are down the Interstate 5 by a few minutes. Do a search, I trust the information you're looking for will come up quickly.

At Knott's Berry Farm, Mrs. Knott's Chicken Dinner Restaurant serves delicious food and is WORLD FAMOUS, so be sure to make an attempt to dine there. It's not inside the park, but in the California Marketplace shopping center outside the park gates. The park also offers the newly and recently opened TGI Fridays restaurant that sports the restaurant chain's new look and is only steps outside and away from the park's entrance.
Inside the park, there's the 1950's diner styled Coasters restaurant (like at Cedar Point), so if you haven't been to one, give it a shot. Knott's also has other good eating, such as in the Ghost Town themed area where they serve grilled and BBQ ribs and other tasty entree items for a good price for what you get.
As for Magic Mountain, I advise you to eat outside of the park 'cause most of the food served inside there is generic (fries, cheesburgers and chicken tenders), except for a few locations that serve unique food items (for example: Laughing Dragon Co. and Mooseburger Lodge). But if you have to eat inside the park (since the park is so big and when you're hungry and at the back of the park, that treck to the front of the park and then to the parking lot will kill you) they have a Panda Express inside the park if you have a taste for Chinese grub, but it is definitely overpriced. Be sure to bring a backpack with a lot of snack items and water/beverages so you don't waste your money on the $3.00 frozen lemonades in a medium sized cup.

At this time of the year, crowds are nothing to worry about, so don't rush to the rides you think will have the longest lines. However, X and Deja Vu at Magic Mountain should be made priority "first rides" due to both rides nature to load and unload riders slowly because of the loading platform and unique seating setup.
Knott's coaster tips - GhostRider picks up and maintains queue waits faster and longer than any other coaster in the park so that should be your first priority once you pass the turnstiles at the front gate. And on the flipside, Xcelerator rarely has that many people waiting in line for it. I've been to the park on summer days where Boomerang has more people waiting in line than there are people waiting in line for Xcelerator.

That's a rumor. X used to close on Wednesdays for maintenance, but that was quite awhile ago. All coasters at Magic Mountain should be operating when you visit except for Flashback. However, due to the construction of the new 2006 B&M coaster up on the hill, Revolution and Ninja may be closed during your visit. But I can't gauranteed anything to you. There are some circumstances that can occur out of the park's control when you visit, causing closure. This is true of any park you plan to visit, including Knott's. Xcelerator has been known to be down for an entire day at a time, which
could happen, but don't worry about that, it has a much better reliability factor than Ka or Dragster

Knott's Berry Farm can be thoroughly enjoyed in a single day (meaning multiple repeat rides on the large attractions, as it is a considerably small park), and you most likely will not need an additional day there. However, there is a possibility you may find that you'll need two days at Magic Mountain.
